  • 2 cups all-purpose flour or whole wheat for a denser texture

  • 2 large eggs room temperature
  • 1/2 cup melted butter or vegetable oil
  • 1 tsp vanilla extract for flavor
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions
 

Preheat and Prep:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9x13-inch sheet pan or line it with parchment paper.

Mix Dry Ingredients:

  • Whisk together flour, baking powder, baking soda, and salt in a large bowl. Sift to remove lumps.

Blend Wet Ingredients:

  • In a separate bowl, beat eggs and sugar until light and fluffy.
  • Add kefir, melted butter, and vanilla extract, and mix until smooth.

Combine Batter:

  • Gradually fold the dry ingredients into the wet mixture using a spatula. Avoid overmixing to keep the cake airy.
  • If adding extras like berries or chocolate chips, fold them in gently.

Bake:

  • Pour the batter into the prepared sheet pan, spreading it evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve:

  • Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
